Any readers of this who use a GPS know the answer to this question:

Do topographical, not road, maps of Europe exist for use with a GPS?

I have searched the Garmin and TomTom sites and done Google searches
for the answer to this question and have come up empty handed. I can
find lots of topo maps of the U.S. & Canada, but not of Europe.

Specifically, I am looking at GPS topo maps of Italy to use on hikes
there.

Maps for BITS of Europe exist (eg UK Topo V2 .. which just covers the
UK). However there are some places which have free contour maps for lots
(if not all) Europe, derived from NASA SRTM DEM data .. I believe you
may need to register, and if you want it on DVD rather than electronic
download you will have to pay for the media/shipping.

They do exist for some parts of Europe at least, but sometimes they are
provided as third party products and thus not really advertised by GPS
receiver makers. For example there are two separate product families
that provide Garmin topographic maps for whole Finland (Garmin
Vapaa-ajan kartta and Topo-Suomi).

Anyway the topographic map products that are available are typically
different for each country, so your best bet is to contact an Italian
map source and ask them.

For Garmin there are a lot third party topo map providers for most of Europe
countries:
Netherlands, Belgium, Great Brittain, Germany, France, Spain, Hungary,
Swiss, Austria, Finland, Sweden, Norway and some other East European
Countries. But not (yet) for Italy, Denmark, and some other.
For use with laptop or Pocket PC in conjunction with GPS and OziExplorer
there is very much to find on eMule.
Search for Ozi, Kabouterbond, Lutin.
Germany TOP25 5DVD's
France TOP25 7DVD's
and so on.
