The Mac has nothing to do with the Palm. Any GPS bluetooth GPS will work
with the Zire 72, and any Palm program will run on it. The Mac is
superfluous.

The mapping software runs on the Palm. It's a Palm OS program. If you
can hotsync, you can put it on the Palm with the Mac, and that's all that
is necessary. Most mapping software these days comes on an SD card
anyway, and all you have to do is put the card into the Palm, connect the
GPS, and go.
