Does anyone know how to erase or clear Mapsource maps out of a GPSmap 76 so
there are none left in the unit?

Since you don't have the "C" model, you may have to modify this
procedure slightly, but you should be able to get it to work.
Copied from the Yahoo 76C/CS Group FAQ's:
Garmin's software (MapSource) does not provide a way to delete all
maps from a GPS. You simply load a new set to erase the old ones.
However it won't let you load a blank set. Fortunately there's a trick
you can use to get rid of *all* the stored map data.
In MapSource create a set of maps (doesn't matter what ones) about
5-10Mb in size. Now start the process of downloading them into your
unit. MapSource first shows a dialog showing "Building index files..."
and a time estimate. Let it complete this phase. It'll then say
"Erasing..." and will then start loading the map set you created. At
this point hit the Abort button. Voila you now have no maps loaded!
Be careful not to create too small a map set (e.g. one map) because
the above process will be over before you can hit Abort.
I did as you said and it worked. Thanks.

wouldn't a hard reset fix this?

My understanding is that it would not, strange as that may seem. I
believe that a master reset does not erase loaded maps.
