I have a number (~200) of LAS-format lidar data files. What would be the
most efficient procedure to convert these classified (including only
terrain points) LAS files into e.g. tab delimited XYZ text files
including only X-, Y, and Z-coordinates or to some other stripped-down
format?

If You read my message carefully, You can note that I was not looking for
a basic tool to read LAS into ArcGIS. The tool You suggested does not even
do the conversion I really asked for, not to mention that it would be the
best tool for that purpose.
