I have ArcGIS running on XP via VMWare Fusion on a MacBook. It works
almost as well (or as bad) as it does on Vista on an Amilo Pro. ArcGIS
is a slow, poorly implemented behemoth but the alternatives are few.
It's not fast, even on a Windows PC.
QGIS is dependency hell, requiring PostgreSQL, PostGIS and a whole
list of other packages. You will need some understanding of UNIX for
this.
GRASS is UNIX with a not very pretty GUI thrown in. The learning curve
is off-putting, if you can actually get it to work.
TNT is expensive, ugly and clumsy.
Then there we have Jump, uDig, MultiSpec Carb and NIP2. These aren't
specifically GIS but might help get some jobs done (remote sensing and
visualizing)
Agreed. I have experience running ArcGIS under Parallels with llittle
performance loss... well, MORE significant than normal ArcGIS
performance issues...

maybe you can try gvSIG

For my 2 cents, its OPENJump. You just need to find the right .sh file
in the terminal, and launch it "./xxx.sh
Not a *nix expert, but I made it happen.
OpenJump let me do the analog of clipping some other functions I am
familiar with from Arc. Also used shapefiles just fine. Couldn't
important a .mdb though.
I couldn't get GRASS to do ANYTHING, or gvSIG, and uDig was a big
disappointment. QGIS as OK, but doesn't do much on its own.
Do you HAVE to run Arc or just want to? What are your project plans?
