Just in case anybody is still interested in knowing how to delete maps
on a etrex venture HC with MapSource:

In MapSource select some map to upload to the GPS.
Then upload them to de GPS.
First the little progess window says "Deleting maps" (or something like
that)
and then it starts uploading the new selected maps. At this point we
have to be quick, and click the cancel (or was it "abort") button.
After this the GPS unit freezes (on screen you can read uploading... or
something like that). Turn it off, and then on again, and tadaaa!, no
more maps.

It may not be the best way of doing it, but it works.
