2 days ago I tested my Nuvi 680 with whole bunch of available USB cable I
have and they all worked fine on computer.
Today, I bought the Car cord adapter with output DC-2000mA, but output to
USB is only 500mA. Anyway, as soon as I connect the power it will act as
it's connected to computer, or it won't work as a GPS. I check with the AC
adapter comes with Nuvi 680 and it says the output if 1.0A MAX
I checked with eBay and saw bunch of AC adaptor for Nuvi, either mini USB
(using as charger and GPS mode) or DOCK.
So, I don't think there is any special about the Garmin USB cable, but
someone has mentioned about the 500mmA which may be the case. I also Google
and few (most can't get it to work) claims that their works with Car Cord DC
Adapter, and some mentions they have to use DC/AC Car adapter for it to
work.

Yup, the Garmin car charger has a small resistor in the
cable/connector and this prevents the Nuvi from going
into computer connectivity mode.
You can buy/make/hack your own cable to address this.
But unless you have the time and soldering iron skills
it's probably easier to buy the proper Garmin cable.
You should be able to find one at a good price on Ebay
(or Amazon if Ebay's not your thing).

Even I don't really need the cable *but* the price is so cheap so I just
ordered one from eBay for around $4.xx. Oops! I was thinking to buy the USB
connector but ordered the DOCK by accident.

The Nuvi USB cable has an extra resistor on one of the grounds that is
detected by the Nuvi, and lets it know that it can pull more than 500ma.

Do you mean the Nuvi's USB connector or USB charger *not* the cable as I
tested using different USB cables (USB cable of my cellphone, camera,
regular and straight USB of my portable storage etc..).
And I forgot all about the Y-USB cable to connect 2-USB ports to single
one which will turn the 500ma to 1000ma. I don't have Y-USB cable to test
it myself.
BTW, thanks for the link.
